Gingerbread Green Monster

It’s not too early to start thinking about the holidays, you know.

Or is it?¬† Not sure.¬† But either way, I was craving a green monster that wasn’t peanut butter, or orange, or any of the green monsters I’ve been drinking daily.¬† Instead, I wanted a Christmas green monster.¬† A green monster you could have on Thanksgiving morning, while wrapped in a sweater and wearing wool socks.

It is still definitely too early for wool socks, sadly.  It has actually been pretty warm in these parts lately, so that this green monster was cold was still greatly appreciated.

Gingerbread Green Monster

  • 1 C skim milk
  • 1 T molasses
  • 1/4 C old-fashioned (or quick) uncooked oats
  • 2 handfuls spinach
  • 1 ripe banana, frozen
  • 3-4 ice cubes
  • dash of ground ginger and cinnamon

Combine in a blender–liquids first, than spinach and oats, then heavy solid stuff like ice and frozen banana.¬† Blend for a few minutes until smooth, and enjoy.

I topped with the rest of my molasses (only about 1/2 T went in, originally) and a sprinkle of ground ginger.

My green monster rating?  Total success!  It really did feel a bit holiday-ish while still being refreshing and good for you.

I clearly like to fashion my green monsters closely after desserts.¬† I’ll be the first to admit that I have a sweet tooth (wonder where I got that from…mom!).

Fritz and I also found some time last week to put together¬†a DIY project.¬† We haven’t had a light over the kitchen table since we moved into this apartment over two years ago–and when we eat past dark, it’s dim, to say the least.¬† So combine a yellow wire basket we found for $4 at Big Lots with ribbon, about $5 worth of lighting equipment, and some leftover black spray paint and voila!

Let there be light!

I’m thinking about trying to convince Fritz to go see Contagion with me tomorrow–anyone seen it?¬† Worth the moolah?

    What a great idea for a green monster, I love gingerbread! I still haven’t tried a pumpkin green monster yet though so I’ll need to get that one out of my system before I can move on to gingerbread, but I’ll definitely be trying this at some point down the road!

      I want to make a pumpkin pie green monster too, but I’ve been planning a pumpkin pie overnight oats that I want to get to first! So many pumpkin-themed foods, so little time!

    I didn’t have ginger, so I doubled the cinnamon. And then I discovered I didn’t have molasses, so I threw in about a teaspoon (ish) of maple syrup.*
    sooooo goooooodddd. Best variation/discovery ever.

    Also, I usually omit the ice cubes for a creamier, richer Green Monster.

    *REAL MAPLE SYRUP. Don’t show me “pancake syrup”. That stuff is very offensive to us Canadians.
