Double Chocolate Whole-Wheat Muffins

Thanks for reading my blog. ¬†And commenting. ¬†And being my Twitter friend (A_Full_Measure) even though I’m still not really sure how to use it. ¬†And liking my Facebook page.

In the spirit of a beautiful holiday about loving each other and making other people feel special and appreciated, I thought I’d make another couple of short lists; this time including one about the things that people do on Facebook that annoy the freakin’ heck out of me. ¬†Also, in the spirit of recognizing that I’m being a judgmental brat, you can feel free to either add to the list or point out really annoying things that I do as well. ¬†Like writing in sentence fragments. ¬†And talking about my cat obnoxiously often.

Things People do on Facebook That Annoy the Freakin’ Heck Out of Me:

  • Spelling your boyfriend’s/girlfriend’s/spouse’s/lover’s pet name as “hunni” or “babeey” or anything even remotely similar.
  • WriTiNg LikE ThiS!
  • God forbid–HuNNi, BaBEeE
  • Holier-than-thou updates; all day, every day.
  • Making pointed, bitter statuses (stati?) that clearly reference a specific person but masquerading them¬†as generic.
  • Their/They’re, Your/You’re

Things That Probably Annoy Most People But Do Not Bother Me At All

  • People posting frequently about the most mundane things ever (hello, I have a blog about the meals I eat. Not exactly in a position to judge)
  • Posting really exciting and shocking news on Facebook (it fills my life with joy)
  • Posting 150 million pictures of your adorable baby (I’d like to see more, please)
  • Promoting their blogs or businesses (again, not in the position)
  • When people from a million years ago that you never really liked friend you, presumably to stalk your photos and judge you harshly (frankly, I probably wanted to do that, too).

Anyway, that’s enough of that. ¬†Any that I forgot? ¬†Things that annoy the crapola out of you? ¬†I’m intrigued (and sorry if I do them).

Onto the muffin recipe.

This recipe is possibly my favorite muffin recipe ever. ¬†It’s really more of a muffin-brownie hybrid, making dense and chocolatey muffins…with whole-wheat flour to assuage some of the guilt.

Double Chocolate Whole-Wheat Muffins (adapted from Barbara Bakes)

  • 1/2 C butter
  • 2/3 C unsweetened cocoa powder
  • 1 C sugar
  • 2 t baking powder
  • 1/2 t salt
  • 2 t vanilla extract
  • 2 eggs
  • 1 C milk (I used 1%)
  • 2 C whole-wheat flour
  • 1 -1 1/2 C chocolate chips

Preheat the oven to 350 degrees and fill muffin tins with paper liners.  This recipe makes 12 bountiful muffins.

In the mixer bowl, beat together the butter, sugar, baking powder, salt, vanilla extract, and eggs until light and fluffy.

Add the cocoa powder, flour, and milk and mix until just combined.

Fold in the chocolate chips.  Eat a few from the top, just to test.

Spoon the muffin mix into the cups–I actually could have added a little more to each muffin, but I wanted to eat a few spoonfuls was worried they were too big already. ¬†They could have handled it.

Bake on the middle rack for 25-30 minutes or so, until an inserted toothpick comes out with no crumbs clinging to it–melted chocolate (from the chips) is okay!

I wish I could say inserted without feeling dirty.  I need a new word.  Sorry about that.

Cool, then feast.

These are so good.  I love brownies.  I love them even more when hybridized with a muffin.

I told Fritz I was going to bring a few of them with me to work, and he told me that under no circumstances would that be allowed.  I think he almost started to tear up.

That may be a gross exaggeration.  Which is another Facebook pet peeve.  That I am frequently guilty of.

    1. Use of words that poorly substitute for inappropriate words they are intended to mask (aka “freakin”) (sorry La, too much time with middle school kids…time for vocab upgrade)
    2. Myself when I do the above (as well as the word “s**k” which I really dislike as well)
    3. Their/they’re/there as well as “to” used instead of “too”
    4. All facebook games. Farmville, bejeweled, whatever. Buy a DS already.
    5. Wanting to read an article or a link and having to join or share.
    6. Seeing people I know in embarrassing situations (drunk) that they shouldn’t post, and there old enough to know better (hahaha I did that on accident to annoy you) and I wrote “on accident” on purpose to annoy you too.
    7. Does ANYONE not from upstate NY ever say “on accident”? So irritating.

    2. Pictures of you. Pictures you take
    3. Future full of baby pictures and movies of babies
    4. Hearing from high school friends and checking out their lives without a reunion
    5. Hearing exciting news from friends
    6. Helping friends through tough times and vice versa.

        Ha, Ha. I think your mom is funny, too! You usually make me laugh with your posts, but your mom made me super-laugh! Can’t believe I missed your post on Valentine’s Day; just found it in my inbox. I love crunchy top brownies, so I’m looking forward to trying your muffin recipe. Thanks for not writing “anyways” for “anyway” in your post. That is one of my biggest pet peeves.

    My biggest Facebook pet peeve is the use of profanity. For example: A family member posts an adorable pic of their pets and someone uses a four-letter word in an comment. C’mon! I’m not a prude but I don’t want my young niece to read that.

      I’m nervous now because Fritz always tells me I use go and take/come and bring wrong, and tries to explain it to me, but i really can’t wrap my head around it! i should google that

    These look awesome! The crackly top looks so perfect. I think I need to try these, but probably a smaller batch because my hubby doesn’t like chocolate :( Not that I wouldn’t like to eat the whole batch, haha.
    I completely agree with the things that annoy you on FB and the things you like. I also really dislike when people post about how busy they are, they can’t possibly get everything done and yet they’re posting and playing games, sending messages to people, etc. Really? Get off FB! Lol. Oh, and people promoting their page to their friends doesn’t bug me, random people coming to my blog page and promoting their blog(for no other reason than to promote themselves) bothers me. But oh well, there are always those kinds of people around I guess.

    I love the polka dot ribbon- I am a sucker for little things ;-)
    I also love the recipe because it contains whole wheat and I am constantly replacing white flour with whole wheat (and don’t tell my husband about it). Jen

    I bookmarked these to try :) We are big muffin lovers in our house..What drives me nuts on facebook is when someone posts something super dramatic and then never explains anything..Vaguebooker they call them..lol that drives me nuts or the ones where they all but call someone else out on facebook like highschool and then their friends go after the other one and then everyone is blocking eachother! maybe I just have really juvenile friends? I’m 37 so I sorta expected this stuff to be over with by now :) Wait,wait..the family drama posters drive me nuts too! like, I really didn’t need to know that your step dad has no right in telling you how to dress when he was caught wearing your moms pantyhose..Well..ok that one was good but still!

    I just recently started a FB page for my blog and do not use it that much yet, and because of office restrictions don’t get too many opportunities to check out my personal profile. The things you mentioned are pretty much the things that bug me too. I did however post a list a while back about the things that annoy me on blogs/posts. I think I may have scared a few people away, hehe. You are guilty of none of them. Good to know you are on FB and twitter, will go “like” and “follow” immediately. Are you on Instagram too? That is my latest obsession.

    I love hybrids- especially when chocolate is involved! These look great and they must be healthy since they are muffins AND have whole wheat flour right?? :)

    I made these today, and I just had to comment because they are great. One of my coworkers is vegan, so I substituted chia eggs, applesauce in place of the butter, and frozen raspberries instead of chocolate chips- and still awesome! Thanks so much for sharing!

    Don’t take any offence with the substitutions I’m gonna mention, I was really working with what I had in the pantry and am experimenting with using oils in baking. Made these today with a blend of macadamia/grapeseed/olive oil instead of butter, 3/4 cup of sugar and self-raising whole wheat flour. They rose like crazy, but taste incredible! Probably not quite as dense and brownie-y as yours but they still taste so, so sinful!

    Greetings Lauren! Thank you for all of the awesome recipes! I just baked these but subbed avocado for butter and flaxseed for the eggs! No one could tell the difference and they didn’t even look green. I put the modified recipe on my blog if your’e interested :)
